Chemo and Queso



Who knew that it was the secret combination I had been looking for?

As you should know by now Melissa, all good things come from our latin friends....queso, shrimps, Enrique Iglasias, towels in the shape of swans, puerco, sea colors : ) Ahhh....good times - looking forward to our next adventure together. Glad queso makes you hungry! Lots of love.

hi all, melissa's hubby here. Until this cheese related post, I've quietly observed and been amazed by the love. thank you, thank you, thank you! I knew my wife had a solid fan base, but this has been awesome.
We have been working in sync to kick this things arse. For instance, melissa mentioned that fondue might taste good. Not having any on hand, my mind quickly went to the jar of queso in the fridge. It's that kind of teamwork that could inspire the science community. Quesotherapy.

I have always been a believer in cheese. The fact that my mother served velveta to us regularly as a child probably informs my fondness for jarred cheese products. Let me know if I should bring a bag of chips and jar of Queso for dinner tonight or if you want me to drag out the fondue pot. I'm all for quesotherapy!

Great, now I want a shirt that says Quesotherapy. Sure it would be "cheesy" but I'd rock it. Seriously.

Ooooo, Doug hasn't tried that but I like the idea of quesotherapy - much better than the other stuff! Glad it's working for you. For some reason, sausage, particularly the Polish kind, has been his thing. Like you, he's just happy something's appealing to his chemo taste buds.

Wow - if you tell me you have an urge to sit in front of the TV and watch football - I am going to start searching your house for evidence of brain washing by your adoring husband.

And Matt - no one has said enough about how amazing you have been also through this. You have jumped in completely and supported and helped Melissa and Lucie so much. You have shown us all how it should be done. You guys both are amazing. Thanks for being such a great support and for loving my friend... brings a tear to my eye...

Since you are in the mood for cheese I thought I'd share this cheese fondue recipe. Currently my favorite.

1 12 oz can larger beer - can use non/alcoholic
1 TB English Mustard or other
2 tsp paprika
1/2 tsp cayenne
1 lb - 4 cups sharp cheddar
1 TB cold water
1 TB corn starch
Salt and black pepper to taste

Combine beer, mustard, paprika, and cayenne in heavy sauce pan, stir and simmer med. heat.

Add cheddar cheese in 1/2 cups stirring constantly with wisk in figure 8 pattern.

Combine cheese and cornstarch in small bowl. Add to fondue and bring to a simmer, stirring constantly. Cook over low heat for 1-2 min. or until fondue has thickened. Season to taste with salt/pepper.

Put in fondue pot and dip in crusty bread, broccoli, cauliflower, potatoes, apples or whatever. Its yummy!

Oh man, wish I would have seen this post sooner. I was just in Wisconsin this weekend and I KNOW I could have found some really good cheese options for you there! Well hoping the queso keeps doing its thing for you. Enjoy some for me cause baby is not digging anything that even sounds the slightest bit spicy...yet!
